Cocoa butter is a pale-yellow, pure edible vegetable fat extracted from the cacao bean. Balinese cacao butter is slightly darker because it contains a bit more of the cacao powder and paste. Cocoa butter is one of the most stable fats known, containing natural antioxidants that prevent rancidity and give it a storage life of two to five years. Each package contains a 9 ounce block.
